I shared a single file/document with a colleague and gave them edit permissions. Will they be notified every time I edit/update the document?

It all depends on the settings they choose to have about this particular folder. Depending on the settings that users have set for their account, they’ll receive the relevant notification. You can find more info regarding desktop and mobile notifications here and email notifications here.
They can choose to structure their notifications in the way they want. Following a folder would also help.
