How do I setup unique "email to dropbox" email addresses for my individual client folders?

No, sorry. As I said that isnt how it works. The email is one specific email per Dropbox account which then goes to that one single folder.

That isnt how it works I'm afraid.
Email to Dropbox adds the files to a folder called 'Email Attachments'. It isnt possible, at least natively via Dropbox, to run that at a specific folder level.

Yes, I have followed those steps. I set up the Email to Dropbox and the Email Attachments folder and it works fine when email w/attachments are sent to my account. I want to set up a private dropbox folder for each of my clients so the client can email submissions privately and securely to their individual folder, where we will interact with each other on file editing. The file editing is unique and confidential to each client. I thought a unique Email to Dropbox email address could be enabled that within that folder, keeping the communication and document(s) secure in that folder. I've not been able to make that work. That option isn't available, at least not via email. The email to Dropbox feature only works with the Email Attachments folder.
You can, however, use the File Request feature. You can create a file request that points to a specific folder that your clients can upload files to privately. It's not done via email, but through the Dropbox website via a link you provide them.
