My coworker and I work out of the same excel sheet. Can we both edit the sheet without it creating a duplicate. Ours keeps creating a duplicate file when we save the sheet after we have individually made changes.

Initially, yes, you are right! When multiple people edit the same file at the same time, a conflicted copy will be created. This is to ensure that all changes made to a file by members are saved.
If you'd like to co-author Microsoft Office documents without conflicted copies being created, you can do so with Microsoft Office Online.
You can also use the Dropbox Badge on your desktop app, which notifies you when another person opens, edits, and updates a file in a shared folder.
