I would like to take a video in Dropbox and upload to a Utube Channel.
How can this be done
You can use Zapier to do this. It removes some of your default settings but does the job.
When I choose to upload the video to youtube, it automatically goes to my camera roll. How can I find my dropbox folders so that I can upload from there?
Either first export the video from the Dropbox app to your Camera Roll, or use the Files app (assuming Youtube gives you the option) and navigate to your Dropbox folders from there.

Even if you could, the file would need to be downloaded to your phone first. There's no way to send the file directly to Youtube from the Dropbox servers. Such a feature would need to be created by Youtube, using the Dropbox API, just like Vimeo did.

As people have said you cannot go direct from Dropbox to YouTube it has to go via a local device (such as your camera roll) first.
Your best bet is to speak to YouTube support channels/forums about how to do it I'm afraid
You can, in fact, upload a video from your Dropbox straight to YouTube without first downloading it to your local computer/smartphone. It's done using a service called YouTuBox. You can log in with your YouTube account and then just connect your Dropbox account and choose a YouTube channel.
You can directly upload a video file from Dropbox to your YouTube channel using zzBots.
You can set up a bot in zzBots that will monitor the specified Dropbox folder for newly added files, and then automatically upload them to YouTube.
